Low Carb, No Grain Sandwich Roll

That’s an “oopsie” roll on my half pound buffalo burger with onion and garden tomato! Imagine that, you can pick up your burger and eat it like a normal burger instead of with a fork and knife! This recipe is all over the internet, but here it is:
3 ounces full fat cream cheese
3 eggs, separated
1/2 tsp cream of tartar
pinch of salt

Preheat oven to 250 degrees. Line a baking sheet with parchment paper and brush it with olive oil. Whisk the egg yolks with the cream cheese and a pinch of salt until well combined and frothy. Next whisk the egg whites with the cream of tartar until stiff peaks form. I use my Kitchen Aid to do the whisking in two separate bowls. Next, fold the egg whites into the egg yolk mixture a third at a time. Scoop out at least 6 mounds of the mixture onto your greased parchment paper. Bake for 30 minutes. Let cool. Use a thin spatula to remove the rolls from the parchment paper. Use for burgers, breakfast sandwiches, BLTs, etc, etc! Only 1 carb per roll. I use 2 for a sandwich. Sometimes just one cut in half to make a half sandwich. Enjoy!
