Roasted Rack of Lamb

I don’t just eat bacon and eggs, you know!? This was one of the best Primal meals I prepared at home in a while! I seared a rack of lamb in a cast iron pan and put it in a 400 degree oven while I prepared the rest of the meal. I had been boiling diced celery root for about a half an hour. I drained it, put it in the food processor with some butter, salt and cream and processed it till it was smooth like mashed potatoes. I heated up some leftover roasted vegetable gravy I had from Thanksgiving. And I heated up some green beans in the microwave with Kerrigold butter. The rack of lamb was done in about 20 minutes and was a perfect medium rare. Everything tasted incredible!
