Captain Keto’s Primal Egg Salad

Egg salad is pretty simple stuff, but its a perfect Primal snack or even a meal! I’ll make a batch of egg salad, put it in a container, then in the fridge to chill. Hungry? All you got to do is go get it! The only problem is its so good, you might it all at once! Self control people!

Here’s the recipe:

  • 4 hard boiled eggs from pasture raised chickens
  • 1 stalk of celery, finely diced
  • 1 ounce of grated carrot
  • 1 tbl of chopped red onion or scallions
  • 2 tsps chopped fresh herbs of your choice (optional)
  • 2 tbls of Primal Kitchen Mayo made with avocado oil and eggs from cage free chickens
  • 1 tbl heavy cream, or if you’re going dairy free, use 1 tbl avocado oil
  • 1/2 tsp salt
  1. Put last three ingredients in bowl and whisk together
  2. Add the rest of the ingredients and stir to combine
  3. Transfer to a storage container and chill it in the fridge
  4. This could be four snacks or one meal
